Brown Butter Nutella-Stuffed Pumpkin Chocolate Chip Cookies

Nutella Stuffed Pumpkin Chocolate Chip Cookies
INGREDIENTS
·      1/2 cup butter
·      1/2 cup brown sugar
·      1/2 cup granulated sugar
·      1 teaspoon vanilla
·      1 egg white (NOT THE FULL EGG)
·      1/4 cup pumpkin puree
·      1 1/2 cup all purpose flour
·      3/4 teaspoon baking soda
·      1/4 teaspoon salt
·      1 1/2 teaspoons cinnamon
·      1/4 teaspoon ginger
·      pinch of nutmeg
·      pinch of cloves
·      1 cup chocolate chips
·      1 small jar of nutella (you use about 15 teaspoons), chilled


INSTRUCTIONS
1.          Melt butter in a saucepan over medium heat. The butter will begin to foam. Make sure you whisk consistently during this process. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma. Immediately transfer the butter to a bowl to prevent burning (make sure you scrape all of it out of the pan - every last drop!). Set aside to cool for 5 minutes.
2.          With an electric mixer, mix the butter and sugars until thoroughly blended. Beat in the egg white, vanilla and pumpkin puree until well combined.
3.          In a separate medium bowl whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves. With electric mixer on low speed, slowly add in flour and mix until just combined. Gently fold in chocolate chips. Place plastic wrap over bowl and refrigerate dough for one hour so that the flavors meld together and the butter has a chance to solidify a bit. Alternatively you can place plastic wrap over the dough and place in your freezer for 20 minutes to speed up the process. Either way you want the dough to be fairly cold so that that it's easier to work with and stuff with nutella.
4.          Once dough is chilled measure about 1 1/2 tablespoons of dough and roll into a ball. Flatten the dough ball very thinly into the palm of your hand. Place 1 teaspoon of chilled nutella in the middle and fold dough around it; gently roll into a ball -- it doesn’t have to be perfectly rolled! Make sure that the nutella is not seeping out of the dough. Add more dough if necessary. Place dough balls on cookie sheet, 2 inches apart and flatten with your hand just a tiny bit!
5.          Once ready to bake, preheat oven to 350 degrees F. Bake for 11-13 minutes or until cookies are golden brown around the edges. Cool on baking sheet for 5-10 minutes then remove and transfer to wire rack. Because of the pumpkin, the cookies will stay soft for days. In fact they will soften up, so if you want your cookies to have crispy edges then it is best to enjoy them the first day you bake them (or bring them to a party!). Makes about 15 cookies.

If you happen to have pumpkin pie spice on hand, you can sub 1 1/2 teaspoons for all of the spices called for in the recipe.

History of the Ford Mustang

Vintage mustangs spark the interest of many different car collectors throughout New Jersey! Do any of our followers enjoy vintage mustangs as much as our co-owner, who has a collection of mustangs ranging from the 1980s to 2013?

Depending on your age, the name of the car equated with the mustang will bring two different images to mind. The original “Eleanor” was a fully custom 1971 Ford Mustang that was featured in the 1974 film “Gone in 60 Seconds.” Out of the millions of movies ever made, Eleanor is the one car that people remember specifically as the star of the film. The image of the 74 Eleanor stood for 16 years until the film was remade in 2000 and the world got a glimpse of the new and improved version of the classic star. Although, many will argue that it is impossible to ever re-make such a classic as the 74’ Eleanor.

Chances are if you mention the Ford Mustang to a car enthusiast, they may acknowledge its manufacturing importance, but add the name Shelby to that conversation and their excitement level immediately increases.

Shelby had a stint as a flight instructor during the Second World War, but soon enough he found himself behind the wheel of a range of race cars.

After piloting a flathead Ford V8 hotrod in his first competition – a quarter-mile drag race – Shelby went on to claim three U.S. national sports car championships
Hailing from Leesburg, Texas. Carroll Shelby covered more motor sport ground and was often acknowledged as the U.S. equivalent of Italy’s Enzo Ferrari. He won the 1959 24 Hours of Le Mans in an Aston Martin DBR1, set numerous land speed records at the Bonneville Salt Flats, and was twice named Sports Illustrated “Driver of the Year.”

Sadly he was forced to retire from competitive driving in 1960, but Shelby quickly focused his talents on automotive design and manufacture, where the first Shelby Mustang was born.

Having earlier proven himself with the success of the Shelby AC Cobra, Ford approached Shelby to create a performance car of their 1965 Mustang. His company, Shelby American, gladly accepted the job, and on January 25th, 1965, the Shelby GT350 Mustang was born. The racing version of this beast, the Shelby GT350R, secured its first SCCA race in the following month, competing with cars such as the corvette.

From that day on car lovers and connoisseurs were able to enjoy the Shelby Mustang.

Eli the Bulldog travels the East Coast

Cashfor Junk Autos NJ is proud to announce that Eli the bulldog has been transported to New Hampshire to his foster Mom, Robyn’s home through the organization Long Island Bulldog Rescue.

With arrangements in place, on Saturday, September 16, 2017, the Eli Express began starting at our location and arranging 4 different legs of transport for Eli to get to his foster Mom. Kimberly, our dispatcher, was kind enough to drive him to the NJ/NY border for the first leg of his journey. From there he went to Connecticut, then Massachusetts, and finally New Hampshire.

He couldn’t be happier to be a loving housedog and have fur brothers and sisters. His new brother, Boston, a French bulldog couldn’t be happier to have Eli to snuggle with at night.

Eli was at a high kill shelter after escaping from his breeder's yard! We have a strict motto #adoptdontshop!

As you may know from reading our blogs, we currently have other rescue animals at our location, and others at our personal homes.
